Raw Recipe: Cheezy Macadamia Kale Salad
There’s no denying it: kale is a true superfood packed full of magnesium, iron, calcium, beta carotene, phytonutrients, chlorophyll, fiber and so much more.
But it isn't the tastiest on its own, especially raw. Until now.
When it comes to making raw kale appetizing, the secret is in the sauce.
This salad feature's a rich and creamy sauce with a cheese-like tang from a combination of our stone ground macadamia nut butter, lemon juice, and nutritional yeast. Not only does this sauce work great over fresh kale like in this recipe here, but it can also be used to make kale chips in a food dehydrator.

The Recipe
Cheezy Macadamia Kale Salad
Serves 4-6 as a side
Ingredients
1 head of Italian kale
2 tbsp olive oil
2 lemons, juiced
1/2 tsp salt
4 tbsp Dastony macadamia nut butter
1 tbsp Nutritional yeast
2 tbsp hemp seeds
8 sun-dried tomatoes, chopped
1/2 cup cherry tomatoes, diced
Optional: fresh herbs of choice - parsley, cilantro, basil, etc.
Steps
1. Prep kale by rinsing thoroughly, de-stemming and tearing or chopping leaves into bite-sized pieces.
2. Add lemon juice, olive oil, and salt to kale and massage kale with clean hands to soften and tenderize.
3. Add macadamia nut butter and remaining ingredients and toss well to evenly coat each bite of kale.
